History:
The Paloma — Spanish for “dove” — is one of Mexico’s most beloved cocktails, traditionally made with tequila, lime and grapefruit soda. Its exact origins are uncertain, but the drink rose to popularity in the mid-20th century after grapefruit sodas became widely available in Mexico, and it has long been a favorite in the bars around Tequila, Jalisco. This version keeps the Paloma’s bright grapefruit and lime, swaps tequila for Divine Clarity Vodka, and replaces the soda with fresh ruby red grapefruit juice and tonic for a drier, more refreshing finish. A slice of cucumber adds a cool, garden-fresh note that pairs perfectly with the clean, smooth vodka.
