History
The Happy Irishman is a MurLarkey original inspired by the long tradition of layered Irish drinks. The most famous of those is the Irish Coffee, invented by chef Joe Sheridan at Foynes Airport in Ireland in 1943 to warm a group of cold, weary transatlantic passengers — a drink that quickly became a national signature. The Happy Irishman builds on that lineage by floating a layer of Guinness on top of a coffee-and-whiskey base, letting the toasted, malty character of Ireland's most famous stout sit alongside the rich coffee depth underneath — a celebration of Irish drinking tradition in a single, layered glass.
