Gin Paloma

A gin-forward riff on the beloved Mexican classic — MurLarkey's Imagination Gin replaces tequila in this crisp, citrusy Paloma for a refreshing and unexpected twist.

Ingredients

1.5 oz Imagination Gin
1 oz  Lime Sour
1 oz Grapefruit juice

Instructions

  1. Run a lime wedge around the rim of a highball glass and dip it in coarse salt (optional).
  2. Fill the glass with ice.
  3. Add 1.5 oz of MurLarkey Imagination Gin.
  4. Add 1 oz of Lime Sour mix.
  5. Add 1 oz of fresh grapefruit juice.
  6. Stir gently, then top with a splash of sparkling grapefruit soda or club soda if desired.
  7. Garnish with a lime slice on the rim.

History

The Paloma is one of the most popular cocktails in Mexico, generally credited to Don Javier Delgado Corona, the longtime owner of La Capilla bar in Tequila, Jalisco. The original is made with tequila and grapefruit soda, and dates back to at least the 1950s. The name means "dove" in Spanish. MurLarkey's version swaps tequila for their botanical Imagination Gin, giving the drink a more herbaceous, complex character while keeping the cocktail's signature citrus brightness intact.
