History:

The Aviation first appeared in Hugo Ensslin’s 1916 book Recipes for Mixed Drinks, created during his time as head bartender at the Hotel Wallick in New York City. Named for the excitement surrounding early flight, the original combined gin, maraschino liqueur, lemon juice and crème de violette, which gave the drink its pale, sky-like color. This simplified version captures the same cherry-and-citrus character using easy-to-find ingredients, with ImaGINation Gin’s bright botanicals leading the way and an optional splash of soda for a lighter finish.
